Chowder & Cornbread Recipes

We've been enjoying this recipe for months -- we just love it, so i decided to post it:

Chowder

8 slices bacon, cooked
1 - 2 chicken breasts (enough to make 1 - 2 cups cubed chicken)
1 onion, chopped
1 - 2 cloves garlic, crushed
2 Tb. butter
2 chicken bouillon cubes
1 cup hot water
1 tsp. ground cumin
2 cups milk
2 cups mont.jack cheese, shredded
1 (14 oz.)can creamed corn (ew)
1 (4 oz.)can diced green chilies, undrained
1/4 tsp. tabasco sauce
1 tomato, de-seeded & chopped
a handful of chopped cilantro

1. Cook bacon, set aside. Pour out grease.
2. Add butter, chicken, onion, and garlic until chicken's just about cooked through. Take out chicken, cut into bite-size pieces, and return to pot.
3. Dissolve bouillon in hot water. Add to chicken mix. Add cumin, bring to boil. Reduce heat, cover, and simmer 5 minutes.
4. Add milk, cheese, chilies, corn, and tabasco. Stir over low heat until cheese melts.
5. Stir in tomatoes and cilantro.

Cornbread

2 cups bisquick
1/2 cup cornmeal (i just pour in 1/2 a box of jiffy cornbread mix)
1/2 cup sugar
1/2 tsp. baking powder
2 eggs, beaten
1 cup milk
1 stick of butter, melted

1. mix dry ingredients, set aside
2. mix wet ingredients, add dry to it.
3. pour into greased 8"X8" pan.
4. bake 350 for 30-35 min. (until toothpick comes out clean...)

for simon and garfunkel chicken, you just wrap a slice of cream cheese into some thin-sliced chicken breast, secure with a toothpick, roll them in flour, then roll them in beaten egg, then roll them in crushed cracker crumbs, then lay them in a pan of 1/4 cup melted butter. sprinkle "parsley, sage, rosemary, and thyme" all over the top, bake at 350 for 30-40 minutes (or until coked through) we eat it with white rice and fresh green beans.
